Lemon Meringue

The recipe for this Lemon Meringue Ice Cream Pie in Toasted Pecan Crust comes from Jamie’s Restaurant in Pensacola, Florida and was included in the April, 2007 Bon Appetit (page 42).
I was fortunate to be at the table recently when a relative whipped up the one in the image above.
Fantastic appearance, flavor, and mouth feel. A 500 degree F. oven was used for the singe – so be sure to set your freezer on its lowest temperature – the pastry chef told me that freezing overnight is best. The recipe is included in the image below.
